How This Plan Works

This plan is built on three Korean proteins cooked Sunday โ€” gochujang chicken thighs (Monday-Tuesday), Korean ground turkey (Wednesday-Thursday), and Korean fried rice using both (Friday). Each protein uses gochujang as the flavour anchor, which means the whole week has a cohesive flavour language even though each dish is technically different. Total Sunday active prep time: 50 minutes.

The component strategy: rice cooked in one large batch covers all 5 days. Spinach namul (sigeumchi) prepared once covers Monday through Thursday as a side. A jar of store-bought kimchi bought Sunday is the condiment for all 5 days. Total cost: $40.

Sunday Prep Sequence (50 Minutes Active)

  1. 0:00 โ€” Marinate 1lb chicken thighs in gochujang marinade (gochujang, soy, sesame oil, garlic, ginger, honey). Set aside while prepping other items.
  2. 0:05 โ€” Cook 3 cups short-grain rice with 4.5 cups water. Bring to boil, cover, low for 18 minutes, rest 5 min. This covers the whole week.
  3. 0:10 โ€” Preheat oven to 400ยฐF. Roast marinated chicken thighs 22-25 minutes until internal temperature reaches 165ยฐF. Rest 5 minutes before slicing.
  4. 0:15 โ€” Make spinach namul: blanch 1 bag (5oz) baby spinach in boiling water 30 seconds, drain, rinse cold, squeeze out all water, toss with 1 tsp sesame oil, 1 tsp soy sauce, 1 tsp sesame seeds, pinch of garlic. This side dish covers 4 days.
  5. 0:25 โ€” Brown 0.75lb ground turkey with gochujang sauce. Cook to 165ยฐF. Cool alongside chicken.
  6. 0:35 โ€” Slice cucumber, prep green onions, portion kimchi into small containers if preferred (or leave in original jar).
  7. 0:45 โ€” Portion into containers: Monday/Tuesday = gochujang chicken + rice + spinach namul. Wednesday/Thursday = gochujang turkey + rice + spinach namul. Friday = hold remaining rice and any leftover protein for fried rice (cook fresh Friday evening, 15 minutes).

Kimchi is a condiment, not a cooked component โ€” never add it to hot food: Adding kimchi directly to a hot bowl or stirring it into the hot rice neutralises the beneficial fermentation compounds and softens the texture. Always add kimchi cold, directly from the refrigerator, at the moment of eating. Treat it as you would pickles on a sandwich โ€” a finishing condiment, not an ingredient that gets cooked or pre-portioned into containers.
Kongnamul (bean sprout side) lasts only 2-3 days โ€” skip it for this plan: If you want to add bean sprout namul (kongnamul), prepare a small batch and eat it Monday and Tuesday only. Do not prep it for Thursday or Friday โ€” blanched bean sprouts develop an unpleasant softness and off-flavour by day 3. The spinach namul in this plan was chosen specifically because it holds 3-4 days, covering the full working week without quality issues.

Frequently Asked Questions

Can I use gochujang in a meal prep plan if I don't like spicy food?

Yes โ€” reduce gochujang to 1 tablespoon per pound of protein rather than the standard 2 tablespoons, and increase the brown sugar slightly to balance the residual heat. Gochujang at 1 tablespoon level gives a mild smoky-savoury flavour with very little heat, suitable for most people who are generally heat-sensitive. The fermented depth remains even at lower quantities.

Where do I find short-grain rice for Korean meal prep?

Short-grain white rice (sushi rice) is available at any Asian grocery store for $1.50-2.50 per pound, and increasingly at major supermarkets. Nishiki, Koshihikari, and Calrose are common brands. If unavailable, jasmine rice is the closest substitution for Korean bowls in terms of texture and starch content โ€” it is slightly less sticky but holds up well through refrigeration and reheating.

Is kimchi good for meal prep?

Kimchi is excellent for meal prep as a condiment โ€” store-bought kimchi keeps 3-6 months refrigerated and adds fermented flavour, crunch, and probiotics at no additional prep time. It should not be cooked into the meal prep components or pre-portioned into hot containers. Add it cold at the moment of eating. One jar at $5.99 covers 2-3 weeks of daily use across the week's meals.
