
How This Plan Works
This plan preps five different cold pasta salad lunches from one Sunday session. Each day gets a different flavor profile β not because variety for its own sake matters, but because pasta salad fatigue is real and monotony is the number one reason people abandon meal prep mid-week. The plan also staggers salads strategically: the mayo-based BLT pasta goes Monday and Tuesday when it's freshest; the oil-dressed salads run Wednesday through Friday when oil-based dressings have had time to fully infuse.
Everything is cold. No reheating. This is a grab-and-go lunch plan designed for people who don't have access to a microwave at work, prefer not to deal with reheating containers, or simply want lunches that are ready the second they open the fridge.

Sunday Prep Sequence (30 minutes active)
Start with proteins (15 min active): Cook bacon until crispy, drain on paper towels, crumble when cool. Hard-boil 4 eggs: cold water start, boil 11 minutes, ice bath 10 minutes. These run mostly unattended.
Cook pasta in two batches (20 min total, mostly hands-off): Cook 12oz rotini for Monday/Tuesday salads. While that cools on a sheet pan, cook 12oz farfalle for WednesdayβFriday. Use the undercook method for both: 1 minute less than package directions, cold rinse immediately, sheet pan cool for 15 minutes.
Prep all vegetables (8 min): Dice cucumbers, halve tomatoes, dice onion and bell pepper, slice olives. Everything at once β you'll pull from the same prep bowls for all five salads.
Mix dressings (3 min): Two dressings: Italian vinaigrette (red wine vinegar + olive oil + Italian seasoning) for three salads; mayo + apple cider vinegar + touch of sugar for the BLT. Make 1.5x the volume you need and reserve the extra half for eating time.
Assemble (7 min): Build Monday and Tuesday first (mayo-based β needs to go in fridge soonest). Then Wednesday through Friday oil-based salads.
Daily Lunch Breakdown
Monday β Italian Salami Rotini ($1.70/serving, 18g protein): 12oz rotini cooked + 1.5oz salami cubed + cherry tomatoes + cucumber + kalamata olives + provolone cubes + Italian vinaigrette (half now, half at lunch). This is the highest crowd-pleasing pasta salad in the rotation. The salami adds smokiness and fat that keeps you full longer than a vegetarian version.
Tuesday β BLT Pasta ($2.10/serving, 16g protein): Rotini + crumbled bacon + cherry tomatoes + romaine (add morning-of to keep crisp) + mayo dressing (mayo + apple cider vinegar + 1 tsp sugar + salt). Eat by Tuesday β this is the only mayo-based recipe in the plan and it follows the 3-day rule. Pack the romaine separately in a small bag; add when you're about to eat.

By Wednesday the chickpeas have absorbed the vinaigrette beautifully β this tastes significantly better than it did on Sunday. Add reserved dressing before eating.
Thursday β Tuna NiΓ§oise Farfalle ($1.60/serving, 28g protein): Farfalle + canned tuna in olive oil (drained) + 2 halved hard-boiled eggs + cherry tomatoes + red onion + capers (optional, $0.30 worth) + Dijon vinaigrette. Highest protein day of the week. Tuna in olive oil holds better than water-packed tuna in pasta β less likely to taste dry or flaky by day 4.
Friday β Greek Chickpea Bell Pepper ($1.90/serving, 20g protein): Farfalle + remaining chickpeas + diced red bell pepper + cucumber + red onion + feta + red wine vinaigrette + dried oregano. By Friday, the olive oil dressing has fully infused the pasta. This is a legitimately great Friday lunch β not a compromise.

Storage Rules and What to Watch For
Monday and Tuesday containers (mayo-based BLT): refrigerate immediately, consume by end of day 3 at the latest. If the mayo looks separated or watery by Tuesday, add 1 tsp of fresh mayo and stir to re-emulsify β it takes 20 seconds and works. Wednesday through Friday containers: oil-based, safe through day 5 at 40Β°F (4Β°C) per USDA FoodKeeper (foodkeeper.usda.gov). Hard-boiled eggs in the Thursday jar: if stored peeled in the salad, consume within 3 to 4 days. If you store eggs in-shell separately and add them Thursday morning, they last up to 7 days in-shell and you get better texture.
Any pasta salad that smells off, looks unusually wet or discolored, or has been above 40Β°F for more than 2 hours β throw it out. The smell test is unreliable for Salmonella specifically, so err on the side of caution with any protein-containing salads.
Frequently Asked Questions
Can I make all five pasta salads with the same pasta shape?
Yes β rotini works for all five recipes if you prefer to buy one box. Buy a 32oz box and use about 12oz per batch (you'll have leftovers or can scale up to make larger portions). Farfalle adds nice visual variety but doesn't affect flavor. The undercook method and two-stage dressing apply identically regardless of shape β just confirm the timing difference for each shape's package directions.
Can I add chicken to make this higher protein?
Absolutely. Add 2oz of sliced roasted chicken thigh to any of the oil-based salads and you'll add approximately 14g protein per serving. Cook 10oz chicken thighs alongside the other Sunday prep β they only take 22 minutes at 425Β°F (218Β°C). Slice when cool and add as a layer in the container. This brings the chickpea feta salad to 36g protein and the tuna salad to 42g, which makes it a legitimately high-protein meal prep week.

What if I don't like one of the recipes in the plan?
Swap it for any oil-based pasta salad from the Day 12 post β all of them follow the same prep method and storage timeline. The only constraint is Monday's and Tuesday's slots: if you're using mayo-based dressing, keep those in the first two days. Any oil-based recipe can go Wednesday through Friday regardless of order.
