Instructions
- Preheat oven to 400ยฐF (204ยฐC). Line two large sheet pans with parchment paper. Two pans are required for 3 lbs โ one crowded pan produces steamed, not roasted, sweet potatoes.
- Scrub sweet potatoes thoroughly under cold water. Do not peel โ the skin is edible, nutritious, and saves 8 to 10 minutes of prep time. Dry completely with a kitchen towel. Surface moisture turns to steam in the oven and prevents the caramelized crust that makes these last 5 days.

- Portion into airtight containers. Label with today's date. Refrigerate immediately. Good for 5 days at 40ยฐF or below. To use: microwave at 60% power for 90 seconds, stirring halfway, or reheat in a dry skillet over medium heat for 3 to 4 minutes.
