
Ingredients
- 2 cups dry red lentils (masoor dal)
- 5 cups water
- 1 large onion, finely diced
- 4 cloves garlic โ 2 minced for dal body, 2 sliced thin for tadka
- 1 inch fresh ginger, grated fine
- 1 can diced tomatoes (14oz), or 2 fresh Roma tomatoes diced
- 2 tbsp ghee (divided โ 1 tbsp for dal, 1 tbsp for tadka)
- 1 tsp cumin seeds
- 1 tsp ground coriander
- 0.75 tsp ground turmeric
- 0.5 tsp red chili powder (adjust to heat preference)
- 1 tsp garam masala (added at end)
- 1 tsp kosher salt (adjust to taste)
- 1 tbsp lemon juice (freshly squeezed)
- 2 tbsp fresh cilantro, chopped (optional but recommended)
- 2 cups dry basmati rice (cooked separately โ yields 6 cups cooked)
Instructions
- Rinse lentils: place dry red lentils in a bowl, cover with cold water, swirl, drain. Repeat 3 times until water runs mostly clear. Red lentils cook fast and don't need soaking โ rinsing removes surface starch and any debris. Add rinsed lentils and 5 cups cold water to a medium-large pot over high heat.
- Bring lentils to a boil, then reduce to a medium simmer. Skim off any foam that rises in the first 5 minutes โ this is harmless but removing it gives you a cleaner-tasting dal. Red lentils will dissolve into a smooth, thick consistency. Simmer uncovered 18 to 22 minutes, stirring every 5 minutes to prevent sticking at the bottom. They're done when completely soft and porridge-like. Add 0.5 cup more water if it thickens too much.
- While lentils cook, build the masala base in a separate pan: heat 1 tbsp ghee over medium-high. Add diced onion, cook 7 to 8 minutes stirring frequently until golden brown at the edges โ not just softened. Golden onion is the flavor foundation. Add minced garlic and grated ginger, cook 90 seconds until fragrant. Add diced tomatoes, stir, cook 5 minutes until tomatoes break down and the mixture looks jammy and reduced.
- Add spices to the masala: ground coriander, turmeric, red chili powder. Stir into the tomato-onion mixture and cook 1 minute โ blooming ground spices in fat before adding liquid extracts significantly more flavor than adding them to liquid directly. Pour the masala into the cooked lentils, stir to fully incorporate. Add salt. Simmer together 5 minutes.
- Make the tadka (tempered spice finish โ this is the step that separates restaurant-quality dal from home dal): in a small saucepan or ladle over high heat, melt 1 tbsp ghee until shimmering hot. Add cumin seeds โ they should sizzle immediately and pop within 10 seconds. Add the 2 sliced garlic cloves, cook 30 to 45 seconds until golden (not brown โ burnt garlic is bitter and ruins the tadka). Working quickly, pour the entire hot ghee-cumin-garlic mixture directly over the dal. You'll hear a satisfying sizzle. Stir in garam masala and lemon juice immediately.
- Cook basmati rice while dal finishes: rinse 2 cups dry basmati under cold water 3 times. Add to pot with 3.5 cups cold water and 0.5 tsp salt. Bring to a boil over high heat, reduce to lowest setting, cover tightly, cook 12 minutes. Remove from heat, leave lid on, rest 5 minutes. Fluff with a fork. Spread on a sheet pan to cool โ do not leave in the pot steaming, which makes it gummy.
- Cool both dal and rice before portioning. Spread dal in a wide bowl or onto a sheet pan โ it should drop from simmering temperature to below 70ยฐF within 30 minutes this way. Taste dal and adjust: needs more salt? More lemon? A pinch more garam masala? Dal should be savory, slightly tangy, aromatic from the tadka. Add fresh cilantro if using.
- Portion into 8 containers: each container gets approximately 1.5 cups dal plus 0.75 cups cooked basmati rice. For freezing, use freezer-safe containers or heavy-duty zip bags (lay flat to freeze, then stack vertically to save space). Label with date. Refrigerate the portions you'll eat this week; freeze the rest immediately โ dal is one of the few foods that freezes as well as it refrigerates, and a freezer stock of dal portions is one of the more useful things you can maintain.

Cool completely before portioning โ spread dal across a sheet pan or wide bowl for 20 minutes at room temperature, then refrigerate. Never seal warm dal in airtight containers: steam creates condensation that dilutes flavor and accelerates spoilage. Refrigerated at 40ยฐF (4ยฐC) or below: 4 to 5 days per USDA FoodKeeper guidelines (foodkeeper.usda.gov) for cooked legume dishes. Frozen: up to 3 months in airtight freezer-safe containers or freezer bags. Freeze in 1.5-cup portions (one serving) for easy weekday thawing. Thaw overnight in fridge. Reheat in saucepan over medium-low with 2 tablespoons water, stirring until heated through. Do not microwave from frozen โ uneven heating creates cold pockets. Cooked basmati rice stored separately: 4 to 6 days refrigerated, 1 month frozen.
