- 1 bunch lacinato (dinosaur) kale, stems removed, leaves torn
- 1 head romaine lettuce, chopped thick
- 2 cups shredded red cabbage
- 1.5 lbs boneless skinless chicken thighs
- 4 large eggs
- 1 can chickpeas (15oz), drained and rinsed
- 1 cup dry quinoa
- 1 pint cherry tomatoes, halved
- 1 English cucumber, diced
- 1 red bell pepper, diced
- 0.5 red onion, thinly sliced
- 0.5 cup kalamata olives, halved
- 0.5 cup crumbled feta cheese
- 0.25 cup shelled edamame (frozen, thawed)
- 1 tsp olive oil (for massaging kale)
- 0.5 cup red wine vinaigrette
- 0.25 cup miso-sesame dressing
- 2 tbsp lemon juice + 4 tbsp olive oil (mixed)
- 1 tsp kosher salt
- 0.5 tsp black pepper
Instructions
- Cook quinoa: combine 1 cup quinoa with 2 cups cold water in a saucepan. Bring to a boil, reduce to a simmer, cover, cook 15 minutes. Remove from heat, fluff with a fork, spread on a sheet pan to cool completely β at least 20 minutes. Never add warm quinoa to jars; steam causes condensation.
- Cook chicken thighs: preheat oven to 425Β°F (218Β°C). Season thighs with salt, pepper, and a pinch of garlic powder. Roast on a sheet pan for 22 minutes until internal temperature reaches 165Β°F (74Β°C). Rest 8 minutes before slicing into strips. Cool to room temperature before packing β minimum 20 minutes.
- Hard-boil eggs: place 4 eggs in a saucepan, cover with cold water by 1 inch. Bring to a full boil over high heat. Reduce to medium, cook 11 minutes. Transfer immediately to an ice bath for 10 minutes. Peel and halve, or store whole in-shell and slice each morning for best texture.
- Massage the kale: add kale leaves to a large bowl with 1 tsp olive oil and a pinch of salt. Massage firmly with both hands for 90 seconds until leaves darken and soften slightly. This breaks down fibrous cell walls, reduces bitterness, and genuinely extends storage life to 5 days. Kale that's been massaged holds better than any other green for meal prep.
- Prep all vegetables: dry everything thoroughly. Spin or pat romaine completely dry β water on greens is the fastest route to a soggy jar. Dice cucumber, halve tomatoes, dice bell pepper, slice red onion thin and rinse briefly under cold water to reduce sharpness.
- Set up 5 wide-mouth quart mason jars in a row. Work across all jars one layer at a time rather than finishing each jar individually β this is significantly faster. Jar assignments: Jar 1 (Monday) and Jar 2 (Tuesday) get romaine or spinach base. Jars 3β5 (WednesdayβFriday) get massaged kale or shredded cabbage.
- Layer each jar in strict order: 2 tbsp dressing at the bottom β hard vegetables (cucumber, tomatoes, bell pepper, red onion) β 1/3 cup quinoa or chickpeas β protein (chicken strips or halved eggs) β soft toppings (feta, olives, edamame) β greens packed firmly on top. Leave half an inch of headspace. Seal tightly and refrigerate immediately upright.
- To serve: shake the sealed jar 8β10 times vigorously. The dressing travels from bottom to top and coats every layer. Eat straight from the jar or dump into a bowl. Add any crunchy toppings (croutons, nuts, seeds) from a separate small bag at serving time to preserve texture.
