Instructions

- While chicken roasts, cook jasmine rice: 1.5 cups dry rice with 2.25 cups water. Bring to boil, cover, reduce to lowest heat for 15-18 minutes. Remove from heat, leave covered 5 minutes. Spread on a sheet pan immediately after fluffing to cool quickly.
- Prepare broccoli: cut 1 large head into medium florets (approximately 4 cups). Toss with 1 tablespoon olive oil, salt, and black pepper. Spread on a second sheet pan. Roast at 425ยฐF for 12-14 minutes until edges are just beginning to brown but broccoli still has slight resistance โ do not cook until fully soft.
- Rest chicken 5 minutes after removing from oven. Slice into bite-sized pieces. Allow rice and broccoli to cool on sheet pans โ 20-25 minutes uncovered. Do not rush this step. Sealed hot food creates condensation that shortens storage life.
- Portion into 5 containers: rice base (approximately 0.75 cups per container), sliced chicken (approximately 3oz per container), broccoli florets. Drizzle with sauce if using. Seal containers only after contents are no longer steaming. Refrigerate immediately.
