
Ingredients
- 1.5 lb boneless skinless chicken thighs
- 3 tbsp fresh lime juice (marinade)
- 2 tbsp olive oil (marinade)
- 3 garlic cloves, minced
- 1.5 tsp ground cumin
- 1 tsp chilli powder
- 1 tsp smoked paprika
- 1.5 cup dry jasmine rice
- 2.5 tbsp fresh lime juice (for rice)
- 3 tbsp fresh cilantro, chopped
- 1 tbsp olive oil (for rice)
- 1 can black beans (15oz), drained and rinsed
- 1 cup frozen corn, thawed
- 1 red bell pepper, diced
Instructions
- Make the marinade: whisk together 3 tablespoons lime juice, 2 tablespoons olive oil, 3 cloves minced garlic, 1.5 teaspoons cumin, 1 teaspoon chilli powder, 1 teaspoon smoked paprika, 0.5 teaspoon salt, and 0.25 teaspoon black pepper in a bowl or zip-lock bag.
- Add 1.5 lbs boneless skinless chicken thighs to the marinade. Marinate at least 30 minutes at room temperature or up to 12 hours refrigerated. Remove from fridge 30 minutes before cooking if refrigerated.
- Preheat oven to 400ยฐF (200ยฐC). Arrange marinated chicken thighs in a single layer on a lined baking sheet. Roast 22-25 minutes until the internal temperature reads 165ยฐF (74ยฐC). Rest 5 minutes then slice or chop into bite-sized pieces.
- While chicken roasts, cook the cilantro lime rice: combine 1.5 cups dry jasmine rice with 2.25 cups water, bring to a boil, cover and reduce to low for 15-18 minutes until water is absorbed. Remove from heat, let stand 5 minutes.
- Immediately fluff rice and add 2.5 tablespoons fresh lime juice, 3 tablespoons chopped fresh cilantro, 1 tablespoon olive oil, and 0.5 teaspoon salt. Stir to combine while rice is still hot so the lime absorbs evenly.
- Prepare remaining components: drain and rinse 1 can (15oz) black beans, thaw or heat 1 cup frozen corn, dice 1 red bell pepper (leave raw for crunch).
- Allow rice and chicken to cool to room temperature (approximately 20 minutes) before portioning. Divide rice among 5 containers, top with chicken, black beans, corn, and diced bell pepper. Seal and refrigerate immediately.
Why This Bowl Works for Meal Prep
The cilantro lime marinade does two things simultaneously: it tenderises the chicken overnight through the acid in the lime juice, and it seasons the meat all the way through rather than just on the surface. Chicken thighs marinated for 12 hours taste noticeably more flavourful than chicken cooked without marinating, especially by day 3 when plain chicken tends to taste flat. The cilantro lime rice underneath mirrors the seasoning profile so the bowl tastes cohesive rather than like two separate components.
Black beans and corn bring the protein total to 30 grams per bowl without needing an oversized chicken portion. The beans also add 8 grams of fibre per serving, which is why this bowl is genuinely filling through a full workday.
Marinating Note
Marinate 30 minutes minimum, 12 hours ideally. If you are pressed for time, even 15 minutes makes a difference. Marinating overnight (Saturday to Sunday morning) is the smoothest workflow โ the chicken goes into the fridge Saturday night and into the oven Sunday morning with zero extra Sunday prep time. Do not marinate longer than 24 hours โ the acid begins to break down the meat fibres and creates a mealy texture.
Storage and Food Safety
USDA FoodKeeper: cooked chicken lasts 3-4 days refrigerated at 40ยฐF (4ยฐC) or below. Cilantro lime rice lasts 4-6 days. The limiting factor is always the chicken โ consume or freeze by day 4. Reheat to 165ยฐF (74ยฐC) internal temperature. Cooked chicken can be frozen in the assembled bowl format for up to 2 months โ thaw overnight in the refrigerator before reheating.
