This is the recipe I make on weeks when I don't want a sink full of dishes after meal prep. Everything happens in one pan โ€” ground turkey browns first, vegetables go in around it, sauce ties it together โ€” and the whole thing is done in about 20 minutes from a cold stove to five portions in containers.

I use 93/7 ground turkey here rather than the leaner 99% fat-free version. The extra fat renders out while browning and carries flavor through the whole pan; 99% fat-free turkey tends to steam rather than brown and comes out drier by day 3-4 in the fridge. If you only have 99% on hand, add an extra teaspoon of oil to the pan to compensate.

One-pan cleanup tip: Brown the turkey first and don't stir constantly โ€” let it sit undisturbed for 60-90 seconds at a time to actually develop browning instead of just turning gray. That browning (fond) is what flavors the vegetables and sauce once they hit the same pan, and it's the difference between a stir fry that tastes like something and one that tastes like boiled meat.

Storage note: Ground turkey with vegetables and sauce is safe for 3-4 days refrigerated at or below 40ยฐF (4ยฐC) per USDA FoodKeeper guidance. This is shorter than a plain baked chicken thigh because of the mixed vegetable and sauce content โ€” plan to eat this within the first 3-4 days rather than stretching it to a full five-day week.

Frozen stir-fry vegetable blends work fine here and actually save time over fresh chopping โ€” just add them straight from frozen in the last 4-5 minutes so they don't overcook and turn watery.
