- 2 cups shredded or diced rotisserie chicken (mix of breast and thigh)
- 3 large eggs, beaten

Instructions
- Use cold, day-old rice straight from the fridge โ this is the single most important factor in good fried rice. Fresh-cooked rice is too moist and clumps together in the pan; refrigerated rice has dried out slightly and the grains separate cleanly when stir-fried. If you only have fresh rice, spread it on a sheet pan and refrigerate uncovered for at least 1 hour to dry it out before using.
- Heat a large wok or wide skillet over high heat until it's genuinely hot โ you should see a faint shimmer or wisp of smoke from the empty pan. Add 1 tbsp oil. Pour in the beaten eggs and scramble quickly, breaking into small pieces. Remove eggs to a separate plate and set aside โ don't leave them in the pan, they'll overcook while you do the rest.
- Add another tbsp of oil to the same hot pan. Add the white parts of the green onions, minced garlic, and ginger if using. Stir-fry for 30 seconds until fragrant โ don't let the garlic brown or burn, it turns bitter fast at this heat.
- Add the shredded rotisserie chicken to the pan and stir-fry for 1 to 2 minutes just to warm it through and pick up the garlic-ginger flavor. Since the chicken is already fully cooked, you're not cooking it through โ just reheating and flavoring it.
- Add the cold rice, breaking up any clumps with your spatula as you add it. Drizzle 2 tbsp soy sauce and the oyster sauce directly over the rice rather than into empty pan space โ this distributes the seasoning more evenly. Stir-fry continuously for 3 to 4 minutes, pressing the rice against the hot pan surface to get some char and prevent it from steaming instead of frying.
- Add the thawed peas and carrots and the scrambled egg back into the pan. Toss everything together for 1 more minute until evenly distributed and heated through. Drizzle the remaining 1 tbsp soy sauce and the sesame oil over the top, add white pepper, and give it one final toss.
- Taste and adjust โ fried rice should taste savory and slightly smoky from the high heat. If it tastes flat, it usually needs either more soy sauce or a higher heat for the final minute of cooking. Remove from heat, stir in the green parts of the green onions.
- Cool completely before portioning into 4 airtight containers โ spreading on a sheet pan for 10 to 15 minutes speeds this up significantly versus letting it cool in a covered container, which traps steam and makes the rice gummy. Garnish with sesame seeds if using. Refrigerate immediately once cooled. Reheat in a hot pan with a touch of oil for the best texture, or microwave covered for 90 seconds to 2 minutes.
