
Ingredients
- 1 rotisserie chicken (yields approx 2.5 cups shredded meat)
- 1.5 cup dry jasmine rice
- 2.5 cup frozen broccoli florets
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp fresh ginger, grated
- 1 tsp honey
- 1 tbsp sesame seeds (optional)
Instructions
- Cook 1.5 cups dry jasmine rice: combine with 2.25 cups water in a medium saucepan, bring to a boil, cover and reduce to low, cook 15-18 minutes until water is absorbed. Remove from heat and let stand covered 5 minutes.
- While rice cooks, shred the rotisserie chicken: pull the legs and thighs off first, then remove breast meat by running your thumb along the breastbone. Shred into bite-sized pieces with two forks. You need about 2.5 cups of shredded meat.
- Make the soy-ginger glaze: whisk together 3 tablespoons soy sauce, 1 tablespoon rice vinegar, 1 teaspoon sesame oil, 1 teaspoon grated ginger, and 1 teaspoon honey in a small bowl. Toss half of this with the shredded chicken and reserve the other half.
- Steam broccoli: place frozen broccoli florets in a microwave-safe bowl with 2 tablespoons of water, cover with a plate, and microwave on high for 4-5 minutes until tender-crisp. Season with a pinch of salt.
- Allow rice to cool to room temperature โ about 15 minutes uncovered. This prevents condensation in the sealed containers.
- Portion rice evenly among 5 containers (approximately 0.75 cups per container). Top each with shredded chicken (approximately 0.5 cups per container) and an equal portion of broccoli.
- Drizzle reserved soy-ginger glaze over each container (about 1 teaspoon per bowl). Sprinkle with sesame seeds if using. Seal containers and refrigerate immediately.
